其实它就是把普通的奶茶给烤干,再复水还原。首先我们准备 10 斤的红茶茶汤,加入 30 克的食用盐搅拌均匀,然后过滤出茶包备用。
接着往锅中倒入 2 升的纯净水,放入 200 克的糖,小火融化,熬煮至微微冒泡后,关火晾凉,加入刚才的红茶茶汤,搅拌均匀,再加入 50 毫升的柠檬汁、30 毫升的白醋以及 100 毫升的果味增香剂,充分混合均匀。
接下来,我们取一个干净无油的容器,铺上一层纱布,将溶液全部倒进去,盖上保鲜膜,放进冰箱冷藏过夜。
第二天取出溶液,用漏网筛去纱布,得到清澈透明的茶底原液,然后装进干净的瓶子里,放回冰箱冷藏保存。
接下来咱们来烤奶茶了,取一个烤盘,铺上一层锡纸,再撒上一层白糖。把刚才调好的茶底原液全部倒在上面,放入预热好的烤箱,上下火 100 度,烤 2 小时,中途记得拿出来晃动几次。
烤好后的奶茶会变得非常蓬松绵密,颜色也会变成焦黄色。把它倒出来冷却一会,用擀面杖敲打几下,让它变得更蓬松。
最后一步,把烤好的奶茶撕碎,然后用纯净水浸泡,比例是 1:1,浸泡的时间越长味道越好。这样一杯香气扑鼻的烤奶茶就做好了!
